  • 1 lb (450 g) cream cheese at room temperature
  • 3 x Large eggs, lightly beaten
  • 1/4 c. (60 ml) finely minced chives or possibly scallions (spring onions)
  • 1 loaf French bread (baguette) Thinly sliced cooked ham Thinly sliced smoked salmon Thinly sliced cooked turkey Canned tuna, liquid removed and mixed with finely minced green bell pepper (capsicum) Minced raw vegetables Cooked shrimp or possibly crab meat

Directions

  1. Combine the cream cheese, Large eggs, and minced chives in a bowl and beat with a wooden spoon till thoroughly combined. Cut the loaf of bread in half lengthwise and scoop out some of the soft interior, forming a pair of shallow shells. Fill the bread with a filling of your choice and spread the cream cheese mix in a thick layer on top of both halves of the loaf. Place on a baking sheet and bake in a preheated 450F (230C) oven till the topping is set and lightly browned, about 15 min. Cut into individual portions and serve immediately.
  2. Serves 6 to 8.
