- 6 to 8 tablespoons ice water

- 4 tablespoons corn starch
- 1/4 teaspoon ground cinnamon
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon fresh lemon juice

%20love%20the%20thrill%20of%20the%20rapids.%3C/p%3E%3Cp%3ENow%20to%20bring%20the%20story%20back%20to%20peach%20pie.%20We%20made%20a%20stop%20at%20one%20of%20my%20favorite%20places%20in%20North%20Georgia%20after%20the%20rafting%20trip.%20Mercier%20Orchards%20is%20the%20epicenter%20of%20the%20North%20Georgia%20apple%20crop%20in%20the%20fall.%20We%20stopped%20in%20for%20an%20apple%20pie%20and%20some%20potato%20salad%20to%20serve%20with%20dinner%20later%20that%20evening.%20While%20perusing%20the%20store,%20I%20spotted%20bag%20after%20bag%20of%20peaches%20freshly%20picked%20off%20the%20trees.%20Georgia%20peaches%20have%20outdone%20themselves%20in%20flavor%20this%20year%20and%20I%20couldn%E2%80%99t%20resist%20grabbing%20a%20bag%20while%20dreaming%20of%20freshly%20baked%20pie.%3C/p%3E%3Cp%3EThis%20post%20features%20a%20classic%20and%20unadulterated%20peach%20pie.%20The%20filling,%20made%20up%20of%20fresh%20peaches,%20sugar,%20and%20a%20hint%20of%20cinnamon,%20is%20wrapped%20in%20a%20traditional,%20buttery%20pie%20crust.%3C/p%3E%3Cp%3EClassic%20Peach%20Pie%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EFor%20the%20crust:%3C/p%3E%3Cp%3E1.%20Cut%20the%20butter%20into%201/2%20inch%20cubes%20and%20place%20in%20freezer%20for%2030%20minutes.%3C/p%3E%3Cp%3E2.%20In%20the%20bowl%20of%20a%20food%20processor,%20combine%20flour,%20sugar,%20and%20salt.%20Pulse%20to%20mix.%20Add%20cold%20butter%20to%20flour%20mixture%20and%20pulse%20several%20times%20until%20mixture%20resembles%20course%20meal.%20Some%20larger%20pieces%20of%20butter%20are%20okay.%3C/p%3E%3Cp%3E3.%20Transfer%20the%20mixture%20to%20a%20bowl%20and%20add%20buttermilk.%20Mix%20with%20a%20fork%20to%20combine.%20Add%20one%20tablespoon%20of%20ice%20water%20at%20a%20time%20to%20the%20mixture,%20mixing%20after%20each%20addition%20until%20dough%20comes%20together.%3C/p%3E%3Cp%3E4.%20Transfer%20dough%20to%20a%20floured%20surface%20and%20knead%20two%20or%20three%20times.%20Cut%20dough%20into%20two%20portions.%20Form%20each%20portion%20into%20a%20four%20inch%20disk%20and%20wrap%20in%20plastic%20wrap.%20Refrigerate%20for%2030%20minutes.%3C/p%3E%3Cp%3EFor%20the%20filling:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20combine%20peaches,%20sugar,%20corn%20starch,%20cinnamon,%20vanilla,%20and%20lemon%20juice.%20Mix%20well%20and%20set%20aside%3C/p%3E%3Cp%3ETo%20assemble%20pie:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3E2.%20Remove%20one%20portion%20of%20dough%20from%20refrigerator.%20Roll%20out%20the%20dough%20on%20a%20floured%20surface%20to%20a%2014%20inch%20circle.%20Roll%20dough%20on%20rolling%20pin%20and%20transfer%20to%20pie%20pan.%20Center%20dough%20over%20pan%20and%20form%20to%20pan.%20You%20should%20have%20about%20an%20inch%20hangover%20around%20the%20pie%20pan.%3C/p%3E%3Cp%3E3.%20Transfer%20peach%20mixture%20into%20pie%20pan%20over%20dough.%20Dot%20the%20filling%20with%20two%20tablespoons%20butter%20cut%20into%20small%20pieces.%3C/p%3E%3Cp%3E4.%20Remove%20second%20portion%20of%20dough%20from%20refrigerator%20and%20roll%20out%20to%20a%2014%20inch%20circle.%20With%20a%20knife%20or%20pastry%20cutter,%20cut%20the%20dough%20into%20one%20inch%20strips.%3C/p%3E%3Cp%3E5.%20Place%20four%20strips%20of%20dough%20across%20the%20pie.%20Turn%20the%20pie%2045%20degrees%20and%20create%20a%20lattice%20by%20weaving%20four%20strips%20perpendicular%20to%20the%20original%20strips.%20(You%20can%20find%20a%20variety%20of%20video%20demonstrations%20on%20creating%20a%20lattice%20pie%20crust%20on%20Youtube.)%3C/p%3E%3Cp%3E6.%20Trim%20excess%20dough%20on%20strips.%20Roll%20the%20bottom%20dough%20over%20the%20strips%20and%20crimp%20with%20your%20thumb%20and%20forefingers.%20Brush%20crust%20with%20beaten%20egg%20and%20sprinkle%20with%20coarse%20sugar%3C/p%3E%3Cp%3E7.%20Transfer%20pie%20to%20a%20baking%20sheet%20and%20place%20in%20the%20oven.%20Bake%20for%2045%20to%2050%20minutes%20or%20until%20the%20crust%20is%20browning%20and%20the%20filling%20is%20bubbling.%20If%20the%20crust%20is%20getting%20too%20brown%20cover%20the%20edges%20with%20aluminum%20foil.%3C/p%3E%3Cp%3E8.%20Cool%20completely%20before%20cutting.%3C/p%3E%3Cp%3E2.2%3C/p%3E%3Cp%3Ehttp://www.southernboydishes.com/2013/08/06/classic-peach-pie/%3C/p%3E%3Cp%3EThis%20entry%20was%20posted%20in%20Baked%20Goods,%20Desserts,%20Recipes,%20Vegetarian.%20Bookmark%20the%20permalink.%3C/p%3E){kind=link}
