%3C/p%3E%3Cp%3EThis%20weekend%20was%20Noodle%20Nose's%205th%20birthday%20party.%20His%20actual%20birthday%20is%20on%20February%202nd%20but%20we%20celebrated%20early.%20I%20still%20can't%20believe%20my%20little%20Noodle%20is%20going%20to%20be%20five%20in%20just%20a%20couple%20days...%20wow.%3C/p%3E%3Cp%3ESo%20for%20his%20birthday,%20instead%20of%20buying%20one%20of%20those%20nasty,%20nauseatingly%20sweet%20and%20pumped%20full%20of%20who%20knows%20what%20birthday%20cakes,%20I%20made%20him%20cupcakes.%20Perfect%20for%20a%20gaggle%20of%20five%20year%20olds%20to%20eat,%20relatively%20messless%20and%20100%20percent%20delicious.%3C/p%3E%3Cp%3EFor%20Christmas,%20Noodle%20got%20me%20Alicia%20Silverstone%20's%20book,%20The%20Kind%20Diet.%20I%20have%20been%20wanting%20it%20for%20a%20while%20so%20I%20was%20super%20excited%20to%20get%20into%20it.%20These%20cupcakes%20are%20from%20Alicia's%20book.%20She%20calls%20them%20'My%20Favorite%20Cupcake'%20and%20I%20can%20see%20why%20it%20is...%20no%20refined%20sugar,%20light,%20flavorful%20and%20very%20simple%20to%20make.%20I%20did%20change%20a%20few%20small%20things,%20as%20per%20usual.%3C/p%3E%3Cp%3EI'm%20keeping%20this%20post%20short%20because%20of%20the%20searing%20migraine%20that%20I%20have%20had%20for%20the%20last%20few%20days.%20It%20has%20subsided%20just%20enough%20for%20me%20to%20stare%20at%20the%20computer%20for%20a%20minute%20but%20it%20will%20be%20back,%20I'm%20sure.%3C/p%3E%3Cp%3EAdapted%20from%20Alicia%20Silverstone's%20'My%20Favorite%20Cupcakes'%20in%20The%20Kind%20Diet.%3C/p%3E%3Cp%3EYield%20about%2012%20cupcakes%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3E1/2%20cup%20soy%20milk%20powder%20(note:%20I%20did%20not%20add%20the%20soy%20milk%20powder%20to%20my%20frosting%20and%20it%20turned%20out%20just%20fine.%20I%20will%20add%20it%20next%20time%20though,%20to%20thicken%20it%20up%20a%20bit)%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20and%20line%20muffin%20tin%20with%20liners%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20milk%20and%20vinegar,%20stir%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20Kitchenaid%20or%20other%20bowl,%20combine%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%20Mix%20to%20combine.%3C/p%3E%3Cp%3EAfter%20your%20milk/vinegar%20mixture%20has%20set%20for%20a%20while%20it%20should%20bubble.%20At%20that%20point%20add%20agave%20nectar,%20oil%20and%20vanilla%20and%20stir%20together.%3C/p%3E%3Cp%3EAdd%20wet%20ingredients%20to%20dry%20and%20mix%20until%20just%20combined%20and%20no%20lumps%20remain.%3C/p%3E%3Cp%3EPour%20batter%20about%201/2%20to%203/4%20way%20full%20in%20each%20tin.%20Bake%20for%2018%20to%2022%20minutes%20until%20cupcakes%20are%20golden%20brown%20and%20a%20toothpick%20comes%20out%20clean.%3C/p%3E%3Cp%3ERemove%20and%20let%20cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3EFor%20the%20frosting:%3C/p%3E%3Cp%3EUse%20a%20mixer%20to%20cream%20butter%20and%20agave%20nectar.%20When%20smooth,%20add%20vanilla%20extract%20and%20cocoa%20powder.%20Continue%20mixing%20until%20smooth%20then%20add%20the%20soy%20milk%20powder%20and%20beat%20on%20high%20until%20fluffy.%3C/p%3E%3Cp%3EScoop%20frosting%20into%20a%20ziploc%20bag%20and%20refrigerate%20for%20at%20least%2030%20minutes%20to%201%20hour%20to%20give%20it%20time%20to%20set%20up.%3C/p%3E%3Cp%3ETo%20frost%20your%20cupcakes:%3C/p%3E%3Cp%3ERemove%20frosting%20from%20refrigerator%20and%20cut%20a%20small%20hole%20in%20one%20of%20the%20edges%20of%20the%20ziploc%20bag.%20Start%20in%20the%20middle%20of%20your%20cupcake%20and%20pipe%20the%20frosting%20around%20the%20top.%20Repeat%20for%20all%20cupcakes.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3ENoodle%20Nose%20is%20obsessed%20with%20the%20Teenage%20Mutant%20Ninja%20Turtles%20so%20I%20decorated%20with%20TMNT%20rings,%20a%20few%20sprinkles%20and%20adorable%20little%20'A's...%20Decorate%20as%20you%20choose%20:)%3C/p%3E%3Cp%3EThanks%20Alicia,%20for%20a%20super%20great%20and%20very%20simple%20cupcake%20recipe...%20they%20are%20also%20my%20favorite%20now%20too!%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EVanilla%20Extract%3C/p%3E){kind=link}
