I had this one going one night when my mom was driving me home from cross country. She told me how she had forgotten about the dish she needed to bring to the party she was going to that night. I told her, "Well I can make something still, but we dont have any ingredients to make things". She said we couldnt go anywere because of the time constraint so I was on my own. I got home, dashed to the fridge, and found tomatoes, cheese, lemon, ham,dried fruit, and avocado. After a few trial and errors I came up with this.....

Cook time: 5 Minutes Servings: About 16 slices

Ingredients Convert Measures

  • One tomato, sliced in half lengthwise, then into 1/4 inch slices
  • About 16 small rectangles of pecorino romano (about 1/8 inch thick)(depending on how many tomato slices you have.)
  • About 8 dried apricots butterflied in half
  • About 16 thyme flowers (with some leaves attached)
  • Zest of 1 lemon
  • Pepper to season
  • Olive oil to drizzle

Directions

  1. On a slice of tomato stack a slice of the cheese then an apricot half and finaly a couple pieces of zest. Top each with a thyme flower, a sprinkle of pepper, and a drizzle of olive oil.
