Muffin Egg Ham Melt Recipe

Now, I for one, usually only have coffee for breakfast, but one night a week I cook what could be considered breakfast items. And some Sundays lend themselves to a leisurely breakfast. This particular combo is one that works well as a light meal or make ahead and warm up for a quick breakfast on a school morning. They also would be ideal to take camping and warm up over a fire.

Ingredients

  • 12 round slices ham
  • 1 package 6 serving cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 4 eggs
  • 6 tablespoons water
  • 12 tablespoons grated cheese

Directions

  1. Lightly spray a 12 tin muffin pan with oil.
  2. Place 1 slice of ham in each opening.
  3. Mix the cornbread mix with the 1 egg and 1/3 cup milk.
  4. Dividing evenly, spoon the cornbread mixture on top of the ham.
  5. Mix the 4 eggs and water.
  6. Dividing evenly, spoon the egg mixture on top of the cornbread.
  7. Top each with 1 tablespoon of grated cheese.
  8. Bake at 400 degrees for 20 minutes.
