Fresh Fruit Crepes With Kiwifruit Sauce Recipe

Ingredients

  • 2 x Large eggs
  • 3/4 x (180 ml) c. lowfat milk
  • 1/2 x (125 ml) c. flour
  • 1/2 x (2.5 ml) tsp. salt
  • 4 x kiwifruit, peeled and minced finely
  • 2 x (30 ml) Tbsp. passion fruit pulp
  • 1 x (15 ml) Tbsp. runny honey
  • 1 x (250 ml) c. mixed fresh fruit, sliced

Directions

  1. Combine the crepe ingredients in order given in a food processor and process till smooth. Chill for two hrs. The consistency should be like thin cream. If not, thin with a little extra lowfat milk.
  2. Pour two to three Tbsp. (30-45 ml) of mix into a buttered pre-heated crepe pan. Immediately tilt pan so the batter covers the bottom in a thin film. Once the mix no longer looks wet in the center, turn the crepe over and cook the other side. Continue to cook the mix in this way till all used. Stack the crepes on a serving plate.
  3. Fold together kiwifruit sauce ingredients in a small bowl. Arrange fresh fruit on top of the crepe stack and spoon the kiwifruit sauce over the top.
  4. Serves 4
