  • 1 1/2 lb boneless, skinless chicken breast halves
  • 1 1/2 c. all-purpose flour, divided
  • 1 tsp baking pwdr
  • 2 x Large eggs, beaten
  • 1/2 c. cool beer
  • 3 c. oil for frying

Directions

  1. 1. Rinse chicken, and slice into 1 inch strips. In a medium bowl, stir together 1-c. flour, and baking pwdr. Fold in the Large eggs and beer. Place remaining 1/2-c. flour in a small bowl.
  2. 2. Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C).
  3. 3. Coat chicken strips in flour. Dip floured strips into the batter. Fry a few at a time in warm oil, turning once, till coating is golden on both sides. Remove, and keep hot till serving.
