These croquettes or patties are golden and crispy on the outside and cheesy and creamy on the inside. An excellent vegetable dish for a dinner party.
Ingredients
- 2 lbs (907 gr) potatoes, peeled, cut in 4
- 1 cup (250 ml) white flour
- 1/2 (125 ml) butter, softened
- 2 large eggs
- 1 cup (250 ml) grated cheese (cheddar, emmenthal or gruyère)
- Salt and pepper
- Pinch of cayenne pepper
- Pinch of nutmeg
- Butter or oil for frying
Directions
- Cook the potatoes until tender in salted, boiling water. Drain and mash potatoes. Add the flour, butter, 1 egg and cheese. Add salt, pepper, cayenne and nutmeg. Let this cool for a while in the refrigerator. When cooled, make 2 inch balls (5 cm) X 1 1/4 inch thick croquettes (3 cm) or patties. Heat the butter or oil in a frying pan and cook the croquettes on one side until browned and crispy then turn and cook the other side until crispy and browned.
