Sour Cream Pineapple Coconut Bars Recipe

Ingredients

  •     Crust:
  • 2 1/2 c. flour
  • 1 1/4 c. sugar
  • 1 c. butter softened
  • 1/4 tsp salt Lowfat sour cream Topping:
  • 1 1/4 c. lowfat sour cream
  • 1 c. coconut
  • 1/2 c. sugar
  • 2 Tbsp. flour
  • 2 x Large eggs
  • 1 can crushed pineapple in juice (16 ounce.) liquid removed, juice reserved Pineapple Glaze:
  • 2 c. powdered sugar
  • 1 Tbsp. butter melted
  • 2 Tbsp. reserved pineapple juice (to 4)

Directions

  1. Crust: Place flour, sugar, butter and salt in bowl. Using mixer, mix till butter is the size of peas, about 30 seconds. Press crumb mix into an ungreased 15 x 10" baking pan. Bake at 350F. for 15 min.
  2. Lowfat sour cream Topping: Place lowfat sour cream, coconut, sugar, flour, Large eggs and liquid removed pineapple in bowl. Mix and beat for 3 min. Spread Lowfat sour cream Topping over partially baked crust. Return to oven and bake for 15 to 20 min or possibly till filling is set. Cold completely.
  3. Pineapple Glaze: Place powdered sugar, butter and 2 Tablespoons juice in bowl. Mix 30 seconds. Stop and scrape bowl. Add in remaining pineapple juice, 1 Tablespoons at a time, till desired glazing consistency. cookies with Pineapple. Store in refrigerator.
  4. Yield: 24-48 bars. Source not given.
