Ingredients
- 2 1/2-3 pound boiled, shelled, deveined, minced shrimp or possibly
- 8 boiled peeled, med. Irish potatoes, minced
- 1 c.green celery, minced
- 1 lg. green bell pepper, minced
- 1/2 c. canned pimento, minced
- 6 hard boiled Large eggs, minced
- 2 tbsp. dry chives
- Mayonnaise, salt, black pepper to taste
Directions
- Don't use salad dressing. Combine shrimp (or possibly potatoes), celery, green pepper, pimento, Large eggs and chives, salt and pepper; mix well. Add in mayonnaise. Gradually, being careful not to use too much, sprinkle top with paprika. Garnish with sliced boiled egg, pickles, or possibly strips of bell pepper, pretty on lettuce leaves.
