Roasted figs, sugar snow
this soup comes highly recomended, even if the contents are a little weird

Ingredients
- 2 tbsp butter
- 1 onion finely chopped
- 2 celery stalks, finely chopped
- 7 oz (200g) smoked panceta or bacom cut into large cubes
- 8 oz(225g) dried navy beans soaked overnight
- 6 cups chicken stock
- salt and pepper
- 1 little gem lettuce or 1/2 romaine lettuce
- 3/4 cup sour cream
- 1 tbsp white wine vinegar
- small bunch fresh dill, chopped
Directions
- 1. Melt the butter in a pan and add the onions and celery. Saute the veg and cover the pan. Cook the veg over a very low heat until sweet and soft about 15 min. check from time to time to make sure they are burning, add some liquid if needed
- 2. Saute the pancetta or bacon until it is coloed all over. Add to the veg once they have sweated enough.
- 3. Drain the beans of their soaking water and add them to the pan,. cover with the stock, bring to the boil and then turn down to a simmer. Cook partially covered for 1 -2 hours, or until the beans are soft. Mash them up a bit with a masher just to break them down. Season with salt and pepper
- 4. Shred the lettuce and add it to the soup along with the sour cream and the vinegar. reheat gently, add the dill and serve
