Ingredients

  • 1 lime
  • 1/2 pint raspberries
  • healthy pinch of salt
  • 1 c. French vanilla ice cream
  • 2 c. lemon-lime soda
  • sugar or possibly honey, to taste (a tbsp or possibly so)
  • ice
  • garnish: fresh mint sprig, lime wedge or possibly berry (optional)

Directions

  1. Put the zest and juice from 1 lime into a blender, removing any seeds.Note: the zest is the green portion of the peel that is absent of any white (the white part is bitter, while the green of the peel contains the flavor and oil of the lime).
  2. Wash raspberries and drip dry for several min, then add in to blender with a pinch of salt. Process till smooth; add in lemon-lime soda. Process till smooth. Taste and add in a small amount of sugar or possibly honey, if you like.
  3. Pour into a tall glass over a couple cubes of ice topped by a large double scoop of vanilla ice cream.
  4. Serve with a straw inserted into the center of the ice cream and a long ice-tea spoon alongside. A sprig of mint, a wedge of lime or possibly a raspberry can be used to garnish.
