Ingredients
- 2 cups all purpose flour
- 1 cup granulated sugar, divided
- 1 tablespoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 (3.5 to 4 oz) espresso flavored dark chocolate candy bar, coarsely chopped
- 1/2 cup buttermilk
- 1 egg, slightly beaten
- 1 cup pumpkin puree (not pumpkin pie mix)
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon

!%3C/p%3E%3Cp%3EI%20feel%20a%20little%20like%20Charlie%20in%20the%20Chocolate%20Factory%20whenever%20I%20peel%20open%20one%20of%20these%20chocolate%20bars.%20That%20gold%20wrapping%20is%20so%20pretty!%20:)%3C/p%3E%3Cp%3EOne%20thing%20that%20I%20like%20to%20do%20is%20pair%20up%20flavors%20that%20I%20haven't%20seen,%20or%20that%20just%20sound%20like%20they%20would%20be%20tasty%20together.%20Pumpkin%20and%20chocolate%20go%20together%20very%20well%20and%20it's%20totally%20been%20done%20before.%20But,%20Espresso%20Chocolate%20and%20Pumpkin?%20I%20had%20a%20bar%20of%20this%20delectable%20chocolate%20in%20my%20stash....%3C/p%3E%3Cp%3EPumpkin%20Java%20Chunk%20Muffins%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%20F.;%20line%20a%2012%20cup%20muffin%20tin%20with%20paper%20liners.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20whisk%20together%20the%20flour,%203/4%20cup%20sugar,%20pumpkin%20pie%20spice,%20baking%20powder,%20and%20salt.%20Stir%20in%20the%20chocolate%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20or%20mixing%20cup,%20blend%20together%20the%20buttermilk,%20egg,%20pumpkin,%20butter,%20and%20vanilla.%20Add%20the%20liquid%20mixture%20to%20the%20flour%20mixture%20and%20gently%20mix%20together%20until%20just%20blended.%20Spoon%20the%20batter%20into%20the%20muffin%20cups,%20Stir%20the%20cinnamon%20into%20the%20remaining%20sugar,%20and%20sprinkle%20over%20the%20muffin%20tops.%20Bake%20for%2018%20to%2020%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20Cool%20on%20wire%20racks.%3C/p%3E%3Cp%3EThe%20smell%20while%20these%20were%20baking%20was%20incredible.%20The%20hubby%20had%20to%20split%20one%20with%20me%20while%20they%20were%20still%20very%20warm....%3C/p%3E%3Cp%3EI%20used%20the%20Green%20&%20Black's%20Espresso%20Chocolate%20and%20it%20was%20very%20tasty.%20Feel%20free%20to%20sub%20plain%20chocolate,%20if%20you%20aren't%20a%20coffee%20fan.%3C/p%3E){kind=link}
