Ingredients
- 1 Tbsp. Oil
- 1 sm Onion, minced
- 2 x Garlic cloves, crushed
- 6 Tbsp. Tomato sauce
- 16 ounce Canned pigeon peas
- 1 c. Uncooked rice
- 4 Tbsp. Minced fresh parsley
- 2 c. Water
- 1 Tbsp. Fresh lime juice
- Â Â Salt, to taste
- Â Â Freshly grnd black pepepr to taste
Directions
- Heat the oil in a saucepan and add in the onion; simmer for 5 min. Add in the garlic and tomato sauce and cook 1 minute. Add in the peas, rice, and parsley and saute/fry 1 minute. Add in the water and lime juice and simmer, covered, for 15 min till rice is cooked. Add in salt and pepper to taste.
