- 6 med. potatoes, skinned and cubed
- Boiling water
- Extra virgin olive oil
- Rosemary
Directions
- Boil potatoes in water for 10 min and drain. Coat the base of a large casserole with extra virgin olive oil. Place potatoes in casserole and sprinkle with additional extra virgin olive oil. Sprinkle with rosemary. Bake at 375 degrees till golden brown crisp.
