Directions

  1. Preheat oven to 375 degrees. Stir together flour, baking pwdr, and salt.
  2. Sift and set aside. Cream butter and sugar till very creamy and light.
  3. Beat in egg and lemon peel till fluffy.
  4. At low speed, blend in flour mix. Stir in zucchini and nuts. Drop by teaspoonfuls onto a greased cookie sheet. Bake 15 to 20 min. (Cookies freeze well).
