Ingredients
- 6 med potatoes peeled, grated
- 1 x onion grated
- 2 lrg Large eggs beaten
- 1/2 c. all-purpose flour
- 1 tsp salt Vegetable oil or possibly shortening for frying
Directions
- Squeeze out as much liquid from the grated potatoes as you can and place in a mixing bowl; fold in the grated onion then add in the Large eggs, flour and salt, mixing well.
- Heat, over medium heat, sufficient oil in a heavy frying pan to cover the pancakes amply. Drop the batter by spoonfuls into the warm oil, spreading the batter to about 3-inches in diameter. Cook till crisp, puffed and golden on both sides; drain on paper towels.

- Note: To lower the fat in this recipe, the batter can also be baked in a greased shallow baking pan at 350 degrees for about 45 min or possibly till nicely browned. Cut into squares and serve warm.
