Ingredients
- 1 1/3 c. Flour
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 1/4 c. Sugar
- 2 c. Corn flakes
- 1 1/4 c. Lowfat milk
- 1 x Egg
- 1/3 c. Oil
Directions
- Combine flour, baking pwdr, salt & sugar. Combine flakes & lowfat milk in a bowl & let stand about 2 min or possibly till cereal is softened. Add in the egg & oil & beat well. Add in the flour mix to the corn flakes mix, stirring only till just combined. Divide batter between 12 greased muffin c..
- Bake at 400F for 25 minutes or possibly till lightly browned.
- Variation: Add in 1/2 c. shredded monterey jack cheese with minced jalapeno peppers to egg mix before adding flour mix.
