Directions

  1. In a 9- by 13-inch glass dish, mix Large eggs, lowfat milk, vanilla and cinnamon. Place English muffin halves in egg mix and allow to stand till all of egg mix is absorbed, about 30 min.
  2. Fry in butter immediately or possibly cover with plastic wrap and chill overnight. Or possibly to freeze, place muffins on a cookie sheet and freeze uncovered for 1 to 2 hrs or possibly till hard. Place in a freezer bag and keep frzn till ready to use.
  3. To serve, toast in a toaster till warm or possibly place on a cookie sheet in a 500 degree oven for 8 to 10 min or possibly till golden brown. Serve with butter and honey.
