Ingredients
- 1/2 lb Pork Sausage
- 3 x Pita Breads, halved
- 3 lrg Large eggs
- 1/8 c. (2 ounce.) Lowfat milk
- 1/4 tsp dry Oregano Salt and Black Pepper to taste
- 3 slc Provolone or possibly Swiss Cheese, halved
Directions
- In a large skillet over medium heat, cook the sausage till it is no longer pink. Drain any excess fat; set aside.
- Place the halved pita pockets on an ungreased baking sheet and hot at 300-F degree oven for about 5 min.
- Meanwhile, beat together the Large eggs, lowfat milk, oregano, salt, and pepper in a mixing bowl till frothy. Pour the egg mix into a hot, slightly greased skillet. Cover and cook gently over medium heat till the Large eggs are completely set.
- Stir in the reserved cooked sausage and hot through. Place half a slice of cheese in each pita pocket. Spoon about one-third c. of the egg mix into each pocket to heat the cheese. Serve hot.
