Ingredients
- 2 (10 ounce.) Packages minced spinach
- 2 c. lowfat sour cream
- 1 can cream of potato soup
- 2 Large eggs, beaten
- 1/4 c. Parmesan cheese
Directions
- Thaw spinach and drain well. Add in lowfat sour cream, soup and Large eggs to spinach and mix well. Pour into greased 2 qt casserole dish. Top with Parmesan cheese. Bake at 350 degrees for 25 to 35 min. Serves 6.
