Ingredients

  • 10 lb grnd beef
  • 30 ounce onions in 1/4" dice
  • 1 lb diced green bell peppers
  • 10 x Large eggs
  • 5 Tbsp. salt
  • 1 1/2 Tbsp. freshly-grnd black pepper
  • 1 1/2 quart diced canned tomatoes
  • 2 1/4 c. grated biscuit crumbs

Directions

  1. Place all in large bowl, mix completely with gloved hand. Place in 3 loaf pans. Press down with spoon. Bake at 300 degrees in convection oven for 60 min.
  2. Remove from oven and invert each loaf over 8-inch wire rack to drain grease and juice. Spread 1/2 c. of catsup over each loaf. Cut into portions 5 to 6 ounces each and keep hot.
  3. This recipe yields 42 (5-ounce) servings.
