Directions

  1. Microwave butter in mixing bowl for 1 1/2 min or possibly till melted. Beat in sugar and Large eggs; blend in buttermilk. Add in flour, cornmeal, baking pwdr, slat and soda; stir just till smooth.
  2. Butter 5-c. fluted microwave-safe ring mold; sprinkle with 2 to 3 Tbsp. cornflake crumbs. Spoon batter into dish.
  3. Microwave, uncovered, on HIGH 6 to 7 min or possibly till no longer doughy, rotating dish once or possibly twice. Cold about 1 min; invert onto serving plate.
