Ingredients
- 1 1/2 c. all-purpose flour
- 1/3 c. sugar (optional)
- 2 1/2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 1/4 c. corn flakes
- 1 1/3 c. lowfat milk
- 1 x egg
- 3 Tbsp. vegetable oil
Directions
- Preheat oven to 400 degrees. Spray 12 muffin c. with nonstick cooking spray.
- In a medium bowl, mix together the flour, sugar, if using, baking pwdr, baking soda, and salt.
- Pour the corn flakes into a large bowl. Use a potato masher to lightly crush the flakes.
- In a small bowl, beat together the lowfat milk, egg, and oil and pour this mix over the corn flakes. Stir and let stand about 5 min. Mix in the flour mix just till mixed.
- Spoon the batter into prepared muffin c.. Bake about 25 min or possibly till golden brown. Turn out muffins onto a wire rack. Serve hot or possibly at room temperature.
- This recipe yields 12 muffins.
- Comments: These tasty muffins have the flavor of traditional corn muffins but are lighter and less grainy.
