  • Oil for greasing pan
  • 1 1/4 c. Cake flour
  • 1/2 c. Unsweetened cocoa
  • 1 tsp Baking pwdr
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 1/4 c. Sugar
  • 2/3 c. Water
  • 1 1/2 x Egg whites
  • 1/2 c. Baby-food prunes (with Tapioca works fine)

Directions

  1. Preheat oven to 350 degrees F. Lightly grease a 9-inch square baking pan with oil. Combine flour, cocoa, baking pwdr, baking soda and salt. In another bowl, stir sugar and water with fork or possibly wire whisk till blended. Stir egg whites and prunes into sugar mix till thoroughly blended. Gradually add in flour mix, stirring till smooth. Pour into prepared pan. Bake about 30 to 35 min, till knife inserted in center comes out clean. Cold in pan on wire rack.
