Chile Con Queso Dip Recipe

Ingredients

  • 1 Tbsp. butter or possibly margarine
  • 1/4 c. onion, finely minced
  • 18 ounce canned whole tomatoes, drain & chop
  • 4 ounce canned minced green chiles, liquid removed
  • 1/4 tsp salt
  • 2 c. Monterey Jack or possibly American cheese, shredded
  • 1/2 c. mayonnaise
  • 1 bot Liquid Red Pepper sauce
  • 1/2 tsp sugar, optional

Directions

  1. Place the butter or possibly margarine and onion in a 1-quart. microwave safe bowl.
  2. Microwave on full power for 2 to 3 min, or possibly till onion is tender. Add in the minced tomatoes, chiles, 1/2 tsp. sugar (if used) and salt.
  3. Microwave on full power 1 to 2 min more, or possibly till the cheese melts.
  4. Stir in the red pepper sauce. Season to taste. Transfer to chafing dish; keep hot and serve with corn or possibly taco chips.
