My new and incredibly delicious discovery is crispy and juicy chicken meatballs with zucchini. For meatball fans, this recipe can become the main one because the taste is really wonderful. I choose chicken instead of pork because it has less fat and is healthier. Your dish will highly depend on chicken that you choose, so choose wisely.
Ingredients
- 500g of Ground chicken
- 1 Zucchini
- 2 cloves of Garlic
- 1 teaspoon of Ground cumin
- 1 Chilli pepper
- 2 tablespoons of Parsley
- 1 tablespoon of Grated lemon peel
- 1 cup of Breadcrumbs
- 1 Egg
- 50g of Spring onions
- 2 tablespoons of Vegetable oil
- pinch of Salt
- pinch of Pepper
Directions
- Grate the zucchini, press the mass a little bit and strain the liquid. Add breadcrumbs, spices, lemon zest, chopped onions and pressed garlic. Add chicken meat, egg and mix everything well.
- Heat the oil in the frying pan. Make small oval balls with a spoon and put in a frying pan. Fry it on high fire from all sides for about 3-4 minutes.
- Heat the oven to 180 ° C. Put the baking paper on a baking tray. Then put all meatballs on a baking paper and cook it in the oven for 10 more minutes.
- Serve as a snack with guacamole or chili sauce. Another option is to serve with a garnish as a traditional meatball :)
