Ingredients
- 1 lb spring mix
- 5 lbs chicken, cooked, cut into cubes
- 1 lb mandarin oranges, drain
- 1 lb cucumbers, thinly sliced
- 1 cup red wine vinegar
- 1/4 cup sugar
- 1 cup vegetable oil
- 1 cup sesame oil
- 1/4 cup sesame seeds
- black pepper to taste
- 20 each spinach herb wraps
Directions
- Combine greens, chicken, oranges, and cucumber in a large bowl.
- Combine vinegar and sugar.
- Whisk in vegetable oil and sesame oil.
- Pour dressing over salad.
- Add sesame seeds, salt and pepper to taste, then toss.
- Place wrap on work surface and spread 4 oz of chicken mixture on bottom half of wrap. Roll wrap from the bottom half to the top. Seal then slice in half on the bias.
