  1. Heat skillet and add in the extra virgin olive oil and 2 cloves of garlic. Saute the mushrooms in the oil for 5 min. Remove from pan and set aside. Blanch the spinach in boiling water for 1 min. Drain. In a bowl mix together Mozzarella, rice, ham, parsley, Parmesan cheese, add in salt and pepper. Lb chicken between 2 sheets of plastic till double in size. Put rice mix on each breast. Roll up and tie with string or possibly secure with a toothpick. Dust each roll in flour and dip in beaten large eggs. Roll in bread crumbs. Heat oil in skillet, brown rolls in pan. Remove and set aside. Add in shallots and remaining cloves of garlic. Saute for a minute and add in the butter, wine, add in tomatoes. Return chicken to pan, baste with the sauce, and simmer over low heat, covered for 30 min. Serve with sauce over rolls.
