Ingredients
- 3 Large eggs
- 1 tbsp. grated orange rind
- 3/4 c. orange juice
- 1/2 c. lowfat milk
- 1/2 c. butter, melted
- 3 c. flour
- 3/4 c. sugar
- 1 tbsp. baking pwdr
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 c. blueberries
Directions
- Combine first 5 ingredients. Beat on medium speed 30 seconds. Combine flour, sugar, pwdr, soda and salt in large bowl. Make a well in the center of the mix. Add in egg mix, stirring till just moistened. Mix in blueberries.
- Pour batter into greased and floured 9 x 5 inch loaf pan. Bake at 350 degrees for 1 hour; or possibly till wooden pick inserted in middle comes out clean. Cold in pan 10 min. Remove from pan and cold completely.
