Barb's Macaroni Salad Recipe

Ingredients

  • 8 ounce Elbow Macaroni uncooked
  • 5 c. Boiling Water
  • 2 tsp Salt
  • 1 stalk Celery finely minced
  • 1 x Vidalia or possibly Sweet Texas Onion finely minced use another type of onion, if you like
  • 5 x hard boiled Large eggs sliced
  • 9 Tbsp. mayonnaise

Directions

  1. Slowly add in macaroni to boiling water so which boiling doesn't stop. After 5 min, add in salt and cook till tender. Drain. Add in celery, onion, and Large eggs. Add in mayonnaise and mix well but gently. Chill for 3-4 hrs or possibly till chilled.
  2. Makes 22 servings.
  3. Note: You may prefer to use red onions or possibly scallions to add in color. I prefer the Vidalia or possibly Sweet Texas for the sweet flavoring.
