The original name for this recipe was "survival bars", which originated in the fact that my partner used to make them for me during stressful, time-crunch periods in university. However, the name is a little misleading as there are many super calorie-nutrient rich bars out there also called survival bars. While fairly healthful, these highly flavourful bars offer a different kind of comfort! They are a splendid mix of a granola bar and muffin. We often dip them into fruit yogurt in the morning. They also freeze well.
Note: this photo is of a carrot variety, but the end result looks quite similar with nuts and dried fruit instead of carrots.
Ingredients
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 3/4 cup water
- 1 cup oats
- 1 cup flour
- 1/2 cup whole wheat flour
- 1/3 cup shortening/unsalted butter
- 1/2 cup sugar
- 1 egg
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 3/4 tsp baking soda
- 1/3 tsp nutmeg
- 1/4 tsp cloves
- 1/8 tsp ginger
- 1/2 cup nuts (any combination of pecans, almonds, walnuts, peanuts)
Directions
- Half an hour before you begin, soak the raisins and cranberries in warm water to plump the fruit.
- Heat oven to 350F.
- Mix ingredients well to create a thick, even batter.
- Press the mixture into a greased pan. Square, deeper pans seem to work better.
- Bake for 15-20 minutes until the tops are light golden brown. Optimal time seems to be 17 minutes for our oven.
- Place on to cooling rack for 10 minutes before serving.
