Apricot Bran Scone Recipe

Ingredients

  • 2 c. Flour (or possibly 1 c. all-purpose and 1 c. wheat)
  • 1/4 c. Sugar
  • 4 tsp Baking Pwdr
  • 2 c. Bran Flake Cereal
  • 4 Tbsp. Butter or possibly Margarine
  • 2 x Large eggs
  • 1/3 c. Lowfat milk
  • 1/2 c. moist-packed Apricots

Directions

  1. In a food processor, whirl together the flour, sugar, baking pwdr, and cereal.
  2. Drop chunks of butter on top of the dry ingredients, and whirl till the butter is incorporated. Lightly beat the Large eggs and stir them in, along with the lowfat milk and fruit.
  3. Turn out onto a floured board and knead a few times. Divide dough into two equal parts, and pat each into a circle. Preheat oven to 400-F degrees. Place each circle of dough on a greased baking sheet, and cut each into 6 wedges as though you were cutting a pie (but leave them in place). Slide the scones into the oven, and bake till lightly browned (check after 15 min). When done, allow to cold, then separate the wedges to serve.
