Ingredients
- 3/4 c. Whole wheat flour
- 1/8 c. Oats
- 2 Tbsp. Oat bran
- 1/2 tsp Cinnamon
- 2 tsp Baking pwdr
- 1/4 tsp Salt
- 1/4 c. Raisins
- 1/2 c. Minced apple
- 1 c. Apple juice
Directions
- Combine dry ingredients. Add in raisins and minced apple. Gently stir in apple juice till dry ingredients are completely moistened. Pour batter by 1/4 cupfuls onto a nonstick skillet or possibly griddle. You can also use cooking spray that I do. Cook till bottom is brown and spatula slips easily underneath. Turn and brown other side.
- Makes eight plump pancakes.
- NOTE: These are good with marinated fruit on top or possibly make a Maple Cream mix by mixing together equal parts of pure maple syrup with plain yogurt.
