Ingredients
- 2 1/2 c. Jiffy Baking Mix
- 1/2 c. sugar
- 3/4 c. lowfat milk
- 1 egg
- 2 teaspoon melted shortening
- 2 c. blueberries
Directions
- Blend Jiffy Mix, sugar, lowfat milk, egg and shortening with a mixer till smooth. Add in more lowfat milk as needed. Stir in blueberries with a spoon. Lightly grease muffin pan and fill cup 3/4 with batter. Sprinkle muffin with a little sugar and bake at 400 degrees for 15 to 20 min. Muffins will come out of pan easily.
