Ingredients
- 2 very ripe bananas, mashed
- 1/3 c. vegetable oil, butter, or possibly Crisco
- 1 rounded c. all-purpose flour
- 1/3 c. light brown or possibly white sugar
- 2 large eggs
- 3/4 tsp baking pwdr
- 1/4 tsp baking soda
- 1 tbsp buttermilk pwdr (optional)
- 1/4 tsp salt
- 2 tbsp myer's rum or possibly banana liqueur
- 1/2 c. Amish Friendship Starter
- 1/2 c. minced pecans, walnuts, or possibly macadamia nuts
Directions
- Preheat oven to 350°F.Put together all ingredients. Turn out into a well greased and lightly floured bread loaf pan, flattening the center slightly.
- When a cake tester inserted in center comes out clean (about 50 min later) remove from oven. Allow to cool for 10 min and run a butter knife along side of pan to free cake. Remove from pan and spread butter on the top of cake, if you like.
