Honey Pecan Crusted Chicken Recipe

  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 24 ounce skinless boneless chicken breast halves (4 -6 ounce breasts)
  • 32 ounce chicken drumstick, no skin, R-Tablespoons-C (4 - 8 ounce legs)
  • 1/4 c. honey
  • 2 Tbsp. dijon mustard
  • 3/4 tsp paprika
  • 1/8 tsp garlic pwdr
  • 1 1/4 c. corn flakes finely crushed (about 4 c. uncrushed cereal)
  • 1/2 c. pecans finely minced cooking spray

Directions

  1. 1. Preheat oven to 400F.
  2. 2. Sprinkle salt and pepper proportionately over chicken; set aside. Combine honey, mustard, paprika, and garlic pwdr in a small bowl; stir well. Combine cornflakes and pecans in a shallow dish; stir well. Brush both sides of chicken with honey mix; dredge in cornflake mix.
  3. 3. Place chicken pcs on a large baking sheet coated with cooking spray.
  4. Lightly coat chicken with cooking spray, and bake at 400F for 40 min oruntil done.
  5. You would expect Southern fried chicken to be served with lots of calories and fat. Not our version, though - we baked the chicken instead of frying it, and we gave it a crisp, greaseless crust made from crushed cornflakes and minced pecans.
