Truly wonderful Gluten free black licorice Recipe

I simply love black licorice but my best friend who is celiac can not have it as it has both dairy and wheat in most licorice. I have worked hard at this one and it is incredible for taste, holds together well and is safe.

Ingredients

  • 8 tbsp coconut oil
  • I cup organic granulated sugar
  • 1/2 cup of organic Tapioca syrup
  • 1/2 cup coconut milk sweetened with 2 tsp honey
  • 1/4 cup blackstrap molasses
  • 1/4 tsp kosher salt
  • 2/3 cup Tapioca flour + 2 tbsp tapioca starch
  • 1 1/2 tbsp licorice extract
  • 1 1/2 tsp cocoa (raw not alkalized organic)

Directions

  1. Line a glass 8' square baking dish with parchment ; oil with coconut oil
  2. Bring coconut oil, sugar, syrup, coconut milk with honey, molasses, and salt to a boil over high heat in a 2qt saucepan, fitted with a candy thermometer until temperature reaches 265 degrees
  3. Remove from heat and stir in flour, extract and cocoa, pour in pan. Chill until firm, 30 -45 minutes
  4. Invert onto a cutting board, peel off parchment, cut into 1/4 inch thick ropes, twist to shape
  5. Place on baking sheet; let sit for for 1+ hour until set. store between parchment paper in airtight container
