Ingredients
- 2 tbsp. butter
- 2 tbsp. extra virgin olive oil
- 1 med. onion, minced
- 2 stalks celery, minced
- 2 carrots, minced
- 3 lg. cans tomatoes, minced
- 3 cans beef broth for stock
- 1/2 c. wild rice, washed
- Salt to taste
- 2 tbsp. basil
- 1/2 c. heavy cream
- Parsley (to garnish)
- 1/8 teaspoon Tabasco sauce
- Healthy pinch of sugar
- Pepper to taste
Directions
- Simmer the entire list of ingredients for 2 hrs, stirring often. While simmering, some of the liquid will be lost, so replenish with additional cans of beef broth (stock).
