Directions

  1. 1. Heat the tomato juice and stock in a large pan and leave on a gentle simmer. Heat the oil in a separate large pan and cook the onion and garlic for 5 min till softened.
  2. 2. Stir in the rice to coat with the oil, then add in a ladleful of the warm stock. Cook over a gentle heat, stirring continuously, till the liquid has been absorbed. Continue in this way till nearly all the stock has been added (this will take about 20 min).
  3. 3. Add in the tomatoes and basil with the remaining stock and cook, stirring occasionally, till the liquid has been absorbed and the rice is tender.
  4. Season to taste. Serve warm, garnished with fresh basil.
  5. NOTES : Vegan

  7. Cooking: 25 min Serves 4 Notsuitable for freezing
