Ingredients

  • 3 lrg Tomatoes, seeded, chop fine
  • 1 med Cucumber, seeded, chop fine
  • 1/2 lrg Sweet onion, chop fine
  • 1 c. Loosely packed fresh basil -
  • 1/4 c. Extra virgin olive oil
  • 1 Tbsp. Cider vinegar
  • 1 cl Garlic, chopped
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1 lrg Loaf white bread, or possibly
  • French bread loaf

Directions

  1. In a large bowl, combinetomatoes, cucumber and onion. In a small bowl comb basil, oil, vinegar, garlic, salt and pepper. Pour over tomatoes and toss. Chill for at least 1 hour. Before serving, allow salad to come to room temp. Cut bread into thick slices; toast under broiler till lightly browned. Top with salad and serve immediately.
