Directions

  1. Trim off all visible fat from chicken. Arrange thighs in a single layer in a 9 x 13-inch baking dish. Set aside.
  2. In a medium bowl, whisk together ketchup, salsa, honey, mustard, chili pwdr and cumin till well blended. Pour sauce over chicken. Turn pcs to coat both sides with sauce.
  3. Bake, uncovered, at 400 degrees F. for 45 min. When chicken is done, arrange thighs on a serving platter and keep hot. Pour sauce into a small saucepan, skimming of as much fat as possible. In a small bowl, mix cornstarch with 1 Tbsp. water till smooth. Add in to sauce. Bring to a boil, and cook till sauce thickens, stirring constantly. Pour extra sauce over chicken or possibly serve it on the side as a dipping sauce.
  4. Note: Chicken breasts or possibly drumsticks can be used in place of thighs. If using chicken breasts, bake them for 30 min instead of 45.
