  • 2/3 c. Flour
  • 3 Tbsp. Brown sugar and extra for sprinkling
  • 1 tsp Baking pwdr
  • 1 x Egg
  • 1/3 c. Peanut butter
  • 1/3 c. Lowfat milk
  • 1 Tbsp. Oil
  •     Jelly and cream cheese or possibly chocolate pcs or possibly thinly sliced bananas

Directions

  1. Put flour, brown sugar and baking pwdr into medium mixing bowl. Use fork to stir well till mixed. Crack egg into small mixing bowl; beat with a fork. Use rubber spatula to stir in peanut butter, lowfat milk and oil (mix won't look well mixed). Add in peanut butter mix to flour mix. Stir till dry ingredients are wet, but still lumpy. Don't overmix!
  2. Line 6 custard c. or possibly micro muffin pan with paper muffin c.. Put 1 rounded tablespoonful of batter into each c.. Add in 1/2 tsp. of jelly, chocolate pcs or possibly 1 banana slice. Top with 1 rounded tablespoonful of batter. Sprinkle additional brown sugar on top. Arrange custard c. in a circle in center of microwave oven. Micro on High for 2 min. Insert a toothpick near center of muffin. If it comes out clean, the muffin is done.
  3. If batter sticks to pick, cook for 10 seconds to 1 minute more. When done, remove from c.. Cold on rack for 10 min. Serve hot.
  4. Makes 6 muffins.
