%20that's%20a%20whole%20lotta%20holiday%20pressure%20to%20put%20onto%20one%20little%20pancake?%20But%20it%20does%20explain%20how%20the%20latke%20came%20to%20represent%20an%20integral%20part%20of%20this%20holiday%20for%20most%20Ashkenazi%20Jews.%3C/p%3E%3Cp%3EBut%20potato%20latkes%20aren't%20as%20traditional%20an%20element%20in%20the%20Sephardic%20Hanukkah%20tradition.%20In%20fact%20weren't%20even%20originally%20a%20part%20of%20Ashkenazi%20Hanukkah%20cuisine%20either.%3C/p%3E%3Cp%3EIn%20case%20you%20don't%20know%20Hanukkah%20dates%20back%20to%20168%20BC,%20when%20the%20Syrian-Greek%20King%20Antiochus%20plundered%20Israel's%20most%20holy%20of%20Jewish%20sites,%20the%20Temple%20in%20Jerusalem.%20The%20Jews%20living%20in%20the%20outskirts%20of%20Jerusalem%20were%20angered%20and%20took%20up%20arms%20as%20they%20vowed%20never%20to%20submit%20to%20King%20Antiochus.%20They%20called%20themselves%20the%20Maccabees%20and%20after%20a%20fierce%20three%20year%20battle%20they%20freed%20Jerusalem.%3C/p%3E%3Cp%3EOnce%20the%20battle%20was%20over,%20the%20Maccabees%20rid%20the%20Temple%20of%20foreign%20idols%20and%20lit%20a%20golden%20menorah%20(oil%20lamp)%20with%20the%20last%20of%20the%20purified%20olive%20oil.%20Those%20in%20the%20temple%20were%20worried%20as%20it%20seemed%20there%20was%20only%20enough%20oil%20to%20burn%20for%20just%20one%20day.%20But%20then,%20according%20to%20tradition,%20a%20miracle%20happened%E2%80%93%20the%20oil%20lasted%20for%20eight%20(crazy)%20nights,%20exactly%20the%20time%20it%20took%20them%20to%20press%20more%20oil%20for%20the%20lamp.%20So%20it%20has%20come%20to%20be%20that%20in%20order%20to%20commemorate%20the%20Miracle%20of%20the%20Oil%20Jews%20all%20over%20the%20world%20light%20there%20own%20menorahs%20and%20eat%20foods%20fried%20in%20oil%20on%20Hanukkah.%3C/p%3E%3Cp%3ESo%20you%20see%20the%20tradition%20of%20fried%20food%20did%20not%20necessarily%20indicate%20the%20the%20food%20need%20be%20potatoes,%20as%20oil%20is%20the%20elemental%20ingredient%E2%80%93%20not%20potatoes.%20In%20fact%20many%20of%20the%20fried%20foods%20associated%20with%20Hanukkahs%20of%20centuries%20past%20would%20typically%20include%20ingredients%20available%20in%20the%20areas%20in%20which%20they%20lived.%20Spanish%20Jews%20were%20far%20more%20likely%20to%20serve%20chicken%20fried%20in%20oil.%20While%20Greek,%20North%20African%20and%20Turkish%20Jews%20(whose%20roots%20are%20shared%20with%20Sephardic%20Jews)%20often%20enjoyed%20sweet%20dough%20fried%20in%20olive%20oil%20as%20their%20symbolic%20fried%20dish%20for%20Hanukkah.%20Eating%20%22local%22%20may%20seem%20like%20a%20a%20modern%20buzz%20word.%20But%20actually%20modernity%20is%20what%20ended%20mankind's%20tradition%20of%20local%20food.%20I%20think%20you%20get%20it.%3C/p%3E%3Cp%3EAshkenazi%20Jews%20developed%20their%20traditions%20in%20Eastern%20Europe%20where%20harsh%20winters%20made%20for%20frugal%20choices.%20But%20potatoes%20were%20cheap%20and%20usually%20available%20from%20even%20the%20%22most%20humble%22%20of%20root%20cellars.%20So%20I%20don't%20think%20you%20need%20me%20to%20explain%20why%20the%20potato%20latke%20developed%20as%20a%20Ashkenazi%20Hanukkah%20tradition.%3C/p%3E%3Cp%3ENow%20I%20am%20not%20just%20spouting%20all%20this%20to%20impress%20you%20with%20my%20knowledge%20of%20the%20Jewish%20religion,%20what%20I%20don't%20know%20about%20Judaism%20could%20fill%20a%20stadium.%20I%20am%20just%20trying%20to%20make%20a%20point%20about%20the%20interconnectedness%20of%20life%20and%20the%20world%20and%20even%20history.%20Because%20it%20seems%20to%20me%20that%20the%20frying%20is%20what%20is%20most%20important%20here%20in%20this%20tradition.%20So%20I%20humbly%20offer%20you%20my%20version%20of%20a%20fried%20latke.%20It%20uses%20sweet%20potatoes%20(because%20I%20like%20'em).%20Which%20may%20not%20be%20%22strictly%22%20traditional.%20But%20I%20hope%20you'll%20look%20to%20my%20intentions%20with%20this%20recipe.%20I%20am%20trying%20to%20blend%20the%20traditions%20of%20Hanukkah%20with%20the%20way%20my%20not%20overly%20religious%20Jewish/Christian%20household%20operates%20in%20the%20modern%20world.%20It's%20my%20nod%20to%20the%20past,%20with%20both%20feet%20in%20the%20present.%3C/p%3E%3Cp%3ESo%20that's%20what%20I%20know%20about%20Hanukkah%20and%20latkes!%20It's%20not%20much%20and%20most%20of%20it%20I%20picked%20up%20from%20the%20Jewish%20Virtual%20Library%20and%20Tori%20(The%20Shiksa%20in%20the%20Kitchen).%20But%20that's%20not%20the%20point%E2%80%93%20because%20Jewish%20or%20not,%20Hanukkah%20or%20no,%20it's%20fun%20to%20spend%20a%20little%20time%20in%20another%20man's%20shoes.%20Food%20traditions%20are%20a%20great%20way%20to%20do%20just%20that.%20Besides%20this%20is%20a%20tasty%20recipe%20that%20I%20know%20you%20would%20enjoy,%20even%20if%20you%20prefer%20to%20call%20it%20a%20fritter.%20GREG%3C/p%3E%3Cp%3EUsing%20a%20box%20grater,%20or%20the%20equivilant%20sized%20grating%20disc%20on%20a%20food%20processor,%20grate%20the%20sweet%20and%20the%20russet%20potato.%20Combine%20them%20both%20in%20a%20large%20bowl.%20Season%20with%20salt%20and%20a%20pinch%20of%20white%20pepper.%20Toss%20to%20combine.%3C/p%3E%3Cp%3EAdd%20flour%20and%20stir%20the%20mixture%20together%20well%20to%20distribute%20the%20flour%20evenly.%20Add%20eggs%20continuing%20to%20stir%20and%20mix.%20In%20a%20large%20cast%20iron%20skillet%20or%20non-stick%20frying%20pan%20set%20over%20medium%20heat,%20heat%20about%201/4%22%20deep%20of%20vegetable%20oil.%20While%20the%20oil%20heats%20form%20the%20potato%20mixture%20into%203-inch%20rounds%20that%20are%20about%201/2-inch%20thick,%20squeeze%20out%20as%20much%20of%20the%20moisture%20as%20you%20can%20as%20you%20form%20them.%3C/p%3E%3Cp%3EUsing%20a%20spatula%20so%20that%20the%20latkes%20do%20not%20fall%20apart%20carefully%20add%20them%20to%20the%20hot%20oil,%20working%20with%202%20or%203%20at%20a%20time.%20Fry%20until%20golden%20brown%20on%20both%20sides%20and%20cooked%20through,%20about%204%20minutes%20per%20side.%20Remove%20to%20a%20paper-towel%20lined%20plate%20and%20season%20with%20more%20salt.%20Repeat%20this%20procedure%20with%20all%20of%20the%20grated%20potato%20mixture,%20adding%20more%20oil%20to%20the%20pan%20as%20necessary.%20Serve%20with%20applesauce,%20green%20onions%20and%20sour%20cream.%3C/p%3E){kind=link}
