Ingredients: 600 gm lean beef strips; 1 Tbsp. oil; 1 tsp grated green ginger; 2 clv garlic; 1 x carrot, thinly sliced; 1/2 x green capsicum, thinly sliced; 2 sm sticks celery, thinly sliced; 2 x shallots, minced; 200 gm snow peas; 1/2 c. Oyster Sauce; 100 gm button mushrooms, sliced (optional)

1 x carrot, thinly sliced
1/2 x green capsicum, thinly sliced
2 sm sticks celery, thinly sliced
2 x shallots, minced
200 gm snow peas
1/2 c. Oyster Sauce
100 gm button mushrooms, sliced (optional)

Directions

Heat half oil in frypan or possibly wok, stir-fry beef strips, garlic & ginger 3 mins. Remove. Heat remaining oil. Stir-fry vegetables 2 mins. Return beef strips etc. Stir in Oyster Sauce. Heat through 2-3 mins.
