- 9 ounces fresh, uncooked lo mein noodles (egg noodles, preferably not dried)
- ¼ cup minced fresh Thai Basil (can substitute any basil you like)
- 2 tablespoon minced fresh chives
- 2 tablespoon sambal oelek (optional, or to taste)
- 1 egg (lightly beaten)
- 1 pinch each kosher salt and freshly cracked black pepper
- 3 tablespoon peanut or canola oil (plus more as needed)
- Sriracha sauce (optional)

%20to%20make%20a%20point.%20A%20point%20I%20don%E2%80%99t%20want%20you%20to%20miss.%20May%20I%20have%20a%20drum-roll%20please%E2%80%A6%3C/p%3E%3Cp%3EThis%20is%20the%20closest%20I%E2%80%99ll%20probably%20EVER%20come%20on%20this%20blog%20to%20making%20kid%20food.%20Still,%20I%E2%80%99m%20not%20quite%20sure%20it%20counts%20as%20a%20%E2%80%9Chealthy%20snack%20for%20kids%E2%80%9D%20or%20not.%20You%20may%20even%20have%20to%20pull%20back%20on%20the%20sambal%20oelek%20(or%20not?).%20But%20I%20promise%20you,%20your%20kids%20will%20gobble%20this%20spicy%20noodle%20cake%20up.%3C/p%3E%3Cp%3EWell,%20not%20that%20I%E2%80%99m%20an%20expert,%20but%20this%20is%20the%20kind%20of%20food%20I%20gobbled%20up%20as%20a%20kid.%20So%20much%20so%20that%20to%20this%20day%20whenever%20I%E2%80%99m%20faced%20with%20extra%20noodles%20of%20any%20kind,%20I%20turn%20them%20into%20a%20spicy%20noodle%20cake.%20Well,%20maybe%20not%20always%20a%20spicy%20noodle%20cake.%20Sometimes%20I%20make%20a%20cheesy%20noodle%20cake.%3C/p%3E%3Cp%3ESpicy%20Noodle%20Cake%3C/p%3E%3Cp%3EToday%E2%80%99s%20version%20has%20an%20Asian%20vibe%20so%20I%20used%20Chinese%20lo%20mein%20noodles.%20That%E2%80%99s%20because%20I%20came%20across%20another%20noodle%20cake%20lover%20in%20Jean-Georges%20Vongerichten%20recently.%20I%E2%80%99ve%20probably%20had%20his%20cookbook%20Jean-Georges%20since%201998%20and%20never%20noticed%20he%20had%20a%20spicy%20noodle%20cake%20recipe%20in%20there%20too.%3C/p%3E%3Cp%3EOne%20cake,%20Two%20cake,%20Hot%20cake,%20Mild%20cake,%3C/p%3E%3Cp%3EBlack%20cake,%20Blue%20cake,%20Old%20cake,%20New%20cake.%3C/p%3E%3Cp%3EIt%20might%20just%20please%20you%20oodles,%3C/p%3E%3Cp%3EThis%20one%E2%80%99s%20one%20made%20of%20noodles.%3C/p%3E%3Cp%3EGREG%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EBring%20a%20large%20pot%20of%20salted%20water%20to%20boil.%20Add%20the%20noodles%20and%20cook%20until%20softened%20and%20pliable,%20about%202%20or%203%20minutes%20for%20fresh%20(longer%20for%20dried).%20Drain,%20rinse%20in%20cold%20water,%20then%20drain%20again%20well.%3C/p%3E%3Cp%3EToss%20the%20noodles%20with%20the%20Thai%20basil,%20chives,%20sambal%20oelek,%20egg,%201%20tablespoon%20oil,%20salt,%20and%20pepper;%20taste%20and%20adjust%20seasoning%20as%20necessary.%3C/p%3E%3Cp%3ELine%20the%20bottom%20of%20a%20heavy%2010-inch%20cast-iron%20skillet%20with%20remaining%202%20tablespoons%20oil;%20turn%20the%20heat%20to%20medium-high.%20When%20the%20oil%20shimmers,%20add%20the%20noodle%20mix.%20Spread%20it%20evenly%20across%20the%20bottom%20of%20the%20skillet%20and%20press%20it%20down%20a%20little%20with%20your%20hands%20or%20the%20back%20of%20a%20spatula.%3C/p%3E%3Cp%3ECook%20for%20about%201%20minutes,%20then%20reduce%20the%20heat%20to%20medium%20and%20continue%20to%20cook%20until%20the%20cake%20is%20holding%20together%20and%20is%20nicely%20browned%20on%20the%20bottom,%20at%20least%203%20more%20minutes.%20Flip%20the%20noodle%20cake%20onto%20a%20plate,%20add%20a%20little%20more%20oil%20if%20needed,%20and%20slide%20the%20noodle%20cake%20back%20into%20skillet%20browned%20side%20up.%20Cook%20on%20the%20other%20side%20until%20nicely%20browned%20(it%E2%80%99s%20ok%20to%20use%20a%20wide%20flat%20spatula%20to%20peek).%20Carefully%20remove%20the%20noodle%20cake%20to%20a%20cutting%20board%20and%20cut%20into%206%20or%208%20slices.%3C/p%3E%3Cp%3EServe%20hot%20or%20at%20room%20temperature%20with%20Sriracha%20sauce%20on%20the%20side%20if%20using.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
