Spicy Chicken Soup Recipe

  • 2 cups chopped leftover chicken breast - shredded
  • 1 stalk celery – chopped
  • ½ cup carrots – chopped
  • 1 medium onion – sliced
  • 2 cloves garlic – chopped
  • ½ bunch parsley – chopped
  • 1 vine ripe tomato – chopped
  • ½ jalapeño – chopped with seeds
  • 2 cups leftover mashed potatoes
  • 5 cups chicken broth
  • Olive oil
  • Few dashes of ground turmeric
  • Grated Romano cheese

Directions

  1. In a soup pot place 3 tablespoons of olive oil and the celery, carrots, onion, garlic, parsley, tomato and jalapeño. Let the veggies sauté for a few minutes until the onion is clear. Add the chicken broth and the mashed potatoes and let simmer for a few minutes.
  2. Carefully, with a hand masher, mash the veggies in the soup. Add the chicken and let simmer for a few more minutes on low. Add a few dashes of turmeric.
  3. Garnish with grated Romano cheese.
  4. This soup is easy and a great way to use your leftovers.

    From what I can taste, this recipe very closely simulates Mama Mandolo's Chicken Soup recipe at the Carrabba's restaurants. I wan't sure how much "1/2 bunch of parsley" was, but I got Italian parsley and put in what I thought my husband would tolerate (he doesn't like green "things"). It was wonderful! I am keeping this in my recipe box forever!!!
    I've cooked/tasted this recipe!
