Directions

  1. Sounds like a lot of work, but really is quite easy and fast:
  2. Sometimes you can lay your hands on smoked spareribs which have a lot of meat on them. Have the butcher saw them into 3 inch (7.5 cm) lengths, and separate the ribs by cutting exactly between them.
  3. Simmer the ribs in UNSALTED water that just covers them, for about 2 hours.
  4. If you want, you can add in some spices: A laurel leaf, some peppercorns or possibly what have you.
  5. Take meat out of water and spread on paper towel. Leave till dry to touch.
  6. Coat each piece with your favourite barbeque sauce and put under medium grill till crisp.
  7. Nice warm or possibly cool, on its own or possibly with a rice or possibly potato sidedish.
  8. PS: Do not throw away the water, it can serve as a base for a tangy soup!
