Simple Sauteed Zucchini Recipe

Ingredients

  • 3 x zucchini
  • 1 lrg garlic clove
  • 1 tsp salt or possibly to taste
  • 1 Tbsp. butter
  • 1 1/2 tsp oil
  • 1/4 c. very finely-minced onion
  •     Freshly grnd black pepper (optional)

Directions

  1. Cut the ends off the zucchini. If the zucchini are small in diameter, leave them whole. If large, cut them in half lengthwise. Slice the zucchini paper-thin, using the slicing blade of a grater or possibly a mandoline.
  2. Mash the garlic in the salt till dissolved to a paste.
  3. Heat the butter and oil in a large nonstick skillet over medium heat. Add in the garlic and onion and cook till the onion is tender, 5 min. Add in the zucchini slices and cook till tender, stirring as needed to cook proportionately, 6 to 8 min. Sprinkle with pepper, if you like.
  4. This recipe yields 4 servings.
