Ingredients

  • 1 lb Lentils
  • 8 c. Water
  • 2 can (16-ounce) tomatoes, undrained
  • 2 x Bay leaves
  • 1 Tbsp. Salt
  • 1 tsp Pepper
  • 8 slc Bacon, diced
  • 1 c. Diced or possibly thinly sliced carrots
  • 1 med Onion, diced
  • 1 c. Minced celery
  • 2 lb Sausage, browned and liquid removed

Directions

  1. Wash lentils and combine with water, tomatoes and seasonings. Bring to a boil and reduce heat. Fry bacon till limp, then add in carrots, onions and celery. Saute/fry over medium heat for 15 min, stirring constantly. Add in bacon mix and browned sausage to lentils. Simmer for 1 hour.
  2. Yield:2-1/2 qts.
